More are embracing a low carb lifestyle for health reasons or to lose weight (like those on the Atkins Diet). But does eating low carbs have to mean eating boring and bland food too? We don’t think so, which is why we have compiled few low carb ultra healthy recipe ideas that are a good way to indulge your taste buds without compromising your waistline.

Italian chicken Bake with Vegetables

If you have some boneless chicken and vegetables in your fridge, this is an easy recipe that you can put together in 15 to 20 minutes. Proteins from chicken make this dish filling and the freshness of the vegetables, that are also rich in nutrients and fibre, make it a true delight to savour.

Slice a few tomatoes and remove seeds. Add a few sliced mushrooms, bell peppers and some sliced red onion. Sprinkle some mixed herbs and fresh sweet basil with few a small splash of extra virgin olive oil, along with generous sprinkle of sea salt and some red chili flakes and bake at 220 C for 20 minutes.

Egg Muffins

Egg muffins or mini egg quiches are an easy to cook low carb breakfast that you can even bake in advance and keep in fridge. Whenever you are in hurry just pop a couple of them in the microwave and a hot breakfast is ready in minutes. Here is my version of vegetable quiche.

Chop the vegetables of your choice. Beat a couple of eggs seasoned with salt, pepper and other herbs you like and add in the chopped vegetables. Take a mini muffin pan and grease it, pour egg mixture in. Bake for 10 to12 minutes at 170C, until eggs are set and it’s golden brown on top.

Dal Fry and Mock Cauliflower Rice

Dal fry that has been cooked with only a little oil makes an excellent low carb vegetarian meal when served with a mock rice made with grated cauliflower. A beautiful gluten free and low carb comfort meal. To cook cauliflower rice, grate cauliflower. Heat one tablespoon of olive oil in a pan, add 1 teaspoon cumin seeds and add 1 to 2 cups of grated cauliflower. Sprinkle 2 to 3 tablespoons of water and cover and cook for 8 to 9 minutes. Then it is ready to serve with tadka dal.

Fish in Green Sauce

Tilapia or any other fish can be steamed or grilled according to your taste. To spice it up, and add a glorious green colour to it serve it along with this sauce.

Grind together coriander leaves, shallots, Thai basil, ginger , lemon juice and green chillies then just cook this with some coconut milk for 7 to 8 minutes.
